New life is happening and recently installed Executive Chef Chris Knightly is at the helm. Energizing the Hilton Resort at Bell Rock and particularly the ShadowRock dining room has become a major emphasis with recent management changes.

Who better to do this than a chef who has 15 years of experience in the hospitality industry? Chef Knightly recently has come from the Arizona Biltmore and before that, prominent positions in such places as the Peabody Orlando Hotel and Boca Raton Resort & Club.

The duties of an executive chef are not only overseeing the main dining areas but also catering inside and outside the facility, room service, special events and obviously being a part of the marketing team, whose goal is to keep The Hilton the premier facility in Sedona. Calling Chef Knightly to the VOC is a win-win situation.

He is comfortable with the Hilton opportunity, living in the Village and Big Park School meets his family's needs.

The ShadowRock patio is a lovely place to dine with its spaciousness, its fire places and its view to the south of the VOC.

It was especially nice while visiting with us on the patio that Chef Knightly set up the attached photo with the current top lunch sellers, The ShadowRock Club Sandwich and the Mahi Mahi Fish Tacos. After the shoot, we got to dine on both!

The club included tender grilled chicken breast, flavor-filled bacon and a generous portion of avocado. The tin of house made potato chips on the side were the best. The tacos-three tender corn tacos arranged in an attractive service rack- were topped by shredded cabbage and accompanied by a spicy aioli, pico de gallo and a relish of black beans and corn. We can appreciate the popularity of the entrees.

Chef Chris aims to make studied changes in the menu over time -- he has been given the green light -- but first wants to gather the right team around him, such as an experienced sous chef and dining room manager.

We'd love to tell you more about the changes in Hilton dining but we can't! Chef Chris along with Cindy Dean, the director of Revenue Management and Marketing gave us hints that everything we talked about and more will be rolled out over the next year. Watch and participate along with us.
